Saffron Shrimp & Asparagus Risotto

Ingredients

  • 2 medium (100g) shallots, finely chopped
  • 2 cloves (10g) fresh garlic, crushed
  • 2 tbs (30g) butter
  • 2 cups (400-g) Arborio rice
  • 2 cubes MAGGI Perfect Saffron Stock
  • 4 cups (1 litre) hot water300g fresh green asparagus, trimmed and thinly sliced 600g shrimp, peeled and deveined
  • 6 tbsp. (60g) grated Parmesan cheese

Directions

  • In a deep pan, sauté shallots and garlic in butter until soft, add rice and stir together and cook over medium heat for 2-3 minutes.
  • Add 2 cubes MAGGI Perfect Saffron Stock, and 4 cups of hot water and stir over medium-low heat for 10 minutes.
  • Add asparagus and shrimp, stir together and cook for another 10 minutes until shrimp is cooked and rice is tender.
  • Stir in Parmesan cheese and serve.
