Chicken Tagine with Pumpkin & Prunes

Ingredients

  • 750g lean chicken breast, cut into large cubes
  • 2 medium onions or 300g, cut into thin slices
  • 3 garlic cloves, sliced
  • 1 ½ teaspoons of each: ginger, turmeric, coriander and cumin powder
  • 1 cinnamon stick
  • 3 cups or 750ml water
  • 2 cubes MAGGI Perfect Saffron Stock
  • 450g pumpkin, peeled and cut into large cubes
  • 300g prunes
  • Zest of 1 small lemon
  • Juice of 1 small lemon
  • 4-6 servings of cooked couscous

Directions

  • Place the chicken cubes in a large pan, add onion slices, garlic, spices, cinnamon stick, saffron, water and MAGGI Perfect Saffron Stock cubes. Bring the ingredients to boil, cover and simmer over low heat for 1 ½ hours or until the chicken is almost tender.
  • Add the pumpkin, prune, lemon zest and lemon juice. Simmer while covered for another 15 minutes or until the vegetables and meat are cooked.
  • Serve with cooked couscous aside.
